What are soul cakes

Make your own soul cakes.
Ingredients:
- 2 cups all-purpose flour
- 1/2 cup sugar
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon allspice
- 1/2 teaspoon ground cloves
- 1/2 teaspoon baking powder
- Pinch of salt
- 1/2 cup unsalted butter, cold and cut into small cubes
- 1/2 cup currants or raisins
- 1 egg, beaten (for egg wash)
- 1-2 tablespoons milk
Instructions:
Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.
In a large mixing bowl, combine the flour, sugar, nutmeg, cinnamon, allspice, cloves, baking powder, and a pinch of salt. Mix well to ensure even distribution of the spices.
Add the cold, cubed butter to the dry ingredients. Use your fingertips to rub the butter into the flour mixture until it resembles fine breadcrumbs.
Stir in the currants or raisins, ensuring they are evenly distributed throughout the mixture.
Gradually add just enough milk to bring the mixture together into a firm dough. Be careful not to overmix. It should be pliable but not sticky.
Roll out the dough on a lightly floured surface to about 1/2 inch (1.25 cm) thickness. Use a round cookie cutter (about 2.5-3 inches in diameter) to cut out the soul cakes.
If you wish you can now use a sharp knife to score a cross on the top of each cake. This tradition is both decorative and symbolic. This will help to give them the traditional style though we chose to leave it out for most of them due to our path.
Place the soul cakes on the prepared baking sheet.
Bake in the preheated oven for about 15-18 minutes, or until the cakes are golden brown.
Allow the soul cakes to cool on a wire rack before serving. They are traditionally enjoyed with a warm drink.
You can adjust the spice quantities to suit your taste. Some variations may also include a hint of grated orange zest for extra flavor.
